Hey friends, welcome back to my channel. Today I'm going to be sharing a cozy weekend at home. I do
have some errands that I'm running so it's not going to be completely at home, but I wanted to
share a cozy fall weekend with you. In the fall, I am much more of a homebody. I like to stay home,
I like to get cozy, I like to read a lot more, so I just wanted to bring you guys along with me. I'm
also making a rotisserie chicken because I want to make a bone broth and buying packaged bone
broth at the store is very expensive. So I thought that I would share how I make a rotisserie chicken
in the air fryer and then I use that to make homemade bone broth in my instant pot. But yeah,
we've already gone on our morning walk and we're planning to go to a pumpkin patch later today.
I haven't been to this pumpkin patch before. I'm hoping that they'll have small white pumpkins so
we can paint those. If you missed my last video saying where I've been and giving you an update,
I'll link that down below in case you missed it, but it's so great to be back. I've missed you all
so much. I hope that you enjoy hanging out with me this weekend and I'll catch up with you in just a
bit. One of my favorite ways to get cozy and unwind is curling up with a good book and I have
a few comfort reads that I always gravitate to in the fall like Anne of Green Gables and Rebecca
and the Harry Potter series. I recently got this illustrated version of Harry Potter and
the Sorcerer's Stone and I love the illustrations by Jim Kay. It's been such a fun way to experience
the story again and I highly recommend it if you're a Harry Potter fan. And I also want to
say that I grew up with Harry Potter which is why the stories always bring me comfort. However,
I do not agree with the harmful remarks made by the author. I really think it's a shame and in
my mind the world of Harry Potter will always be a place where everyone is welcome.
I just sat down at my desk to do a little bit of holiday window shopping online. I'm looking at
Unique Vintage because their holiday collection just released. I love the vintage style and they
had a beautiful kind of emerald green color dress, a swing dress, and then they also have a burgundy
sequin swing dress that I thought was really beautiful. I don't really have any plans for the
holiday season yet but I'm just kind of getting an early start. I also wanted to check out the
collaboration that American Girl is doing with Stony Clover Lane. Everything that I would want
is sold out even though I wouldn't buy it anyways because I'm on a budget and I'm trying really hard
not to spend money. But the Samantha collection would be the one that I would want because she
was my favorite growing up. Did you guys read American Girl books and did you have an American
Girl doll? I had the Me doll so I got one to look like me but my cousin had Samantha and I was
always very envious of her because I wanted Samantha. I liked her clothes I think the best
and the furniture that came. You could buy different furniture collections but yeah they
have the whole collection which is so cute to celebrate 35 years of the 35th anniversary which
makes me feel very very old.
So here's the pumpkins we got. We only got four. These two I have a place that I'm going to put
them and then these two we're going to paint which I think will be fun. We did that last year
and I wanted to do it again. When I got back from Trader Joe's it was time to start to make dinner
so here I'm getting ready to make the chicken in the air fryer. I chopped up some large handfuls of
fresh rosemary and thyme and then I grated about four cloves of garlic and here I'm just mixing
them together with olive oil and I did a few tablespoons of olive oil. As you can see I did
quite a bit but I don't have exact measurements or anything because honestly I'm not good at
measuring things I just kind of eyeball it but the amounts will also depend on the size of your
chicken so I bought I think our chicken was about four pounds. I decided to brush it onto the other
side once I place it into the air fryer basket and I just figured there would be less handling this
way so if you're making this in your air fryer you definitely want to use an oil spray so that
it doesn't stick. I just have an avocado spray that I like to use and then I put salt and pepper
on both sides as well and I let it rest before putting it in for about 10 minutes.
All right so the chicken is in the air fryer and I put it on for 40 minutes and then we flip it over
and do it for another 40 minutes at 360. While I was waiting for that to be ready to rotate I
decided to make myself a cup of this yummy ginger and turmeric tea that I recently got from Thrive
Market. I decided to turn on an old episode of Gilmore Girls while I tried to draw this very
autumnal house in a drawing book that I got recently and I'm using my iPad. I'm learning
how to use Procreate. This was one of my first times using it. It's really fun because I can
just press the undo button instead of having to erase everything but I still have a lot to learn.
First 40 minutes are up. Time to flip. That looks good. So once we rotated the chicken I put a few
lemon slices to add a bit more flavor and then I brushed the rest of the herbs and olive oil
mixture that I had on the chicken and then I put it back in the air fryer for another 40 minutes.
We had leftover brussel sprouts and fennel from the day before that I also made in the air fryer.
I pretty much use it for everything and then I just tossed a quick salad and olive oil with
lemon juice to have with it too. Good morning. I wanted to share a little bit of what I have
planned for today. So this morning I need to get a little bit of work done so I'm gonna go in there
and get some emails done and a few things I need to catch up on and then I think we're gonna go
to Starbucks. Matt wants to get a pumpkin spice latte or something like that so I think we're
to do that and then I want to go for a walk. It's beautiful today outside so I want to go for a walk
and take Mickey our dog and then I plan on making the bone broth so I'm going to share all of that
with you as well. I'll catch up with you in just a bit. Pumpkin spice drink of the year. Cheers.
Cheers to pumpkin spice for me. Oh so good. That hits the spot. Same.
After our walk it was time to start the bone broth and I don't follow an actual recipe for
this although I'm sure you can find something online if you want exact measurements but you
don't really need to add vegetables or herbs in your broth you can just put the bones in and be
done but I like to add a little more flavor with mine plus it's a good way to get rid of whatever
veggie scraps and herb scraps that you might have. So here I'm using carrots, celery, parsnip, onion,
garlic, rosemary, parsley, a few bay leaves, and several black peppercorns. I like to make mine to
be extra peppery but I'm just roughly chopping them and then making it making sure that they
fit inside of the instant pot. You don't really have to cut them into very small pieces and then
once I had everything chopped I put the chicken bones and everything into the instant pot and then
I added a splash of apple cider vinegar and then I cover the rest with water. You want to leave
about quarter of an inch at the top just to give it a little extra room. Yeah so here I'm showing
that I did use a splash of apple cider vinegar along with the water and so once you're done
adding the water you seal the valve and then put it on high pressure and I set mine for two hours.
I didn't really know what to do for dinner so I decided just to make a quick soup with some of the
leftover veggies that I had just to keep things simple and I already had a box of veggie broth
that I needed to use so I just added some fresh rosemary, thyme, ginger, and you can't have soup
without cornbread so I'm glad I had this box of gluten-free cornbread from Trader Joe's. Now I
used my hand mixer for this although you're not really supposed to but I've just found that you
using this and then combine with canned coconut milk it makes the cornbread a little more fluffy
and less crumbly so since I already had an open can of coconut milk from the cornbread I poured
the rest into the soup just to make it a little bit more creamy. So after dinner we watched tv
while we waited for the bone broth to finish and Mickey is funny because he always wants to be
right between us no matter what but then once the bone broth was done cooking in the instant pot and
the pressure was released I removed the lid and then I just let it cool for about 20 to 30 minutes
before I strained it and then I carefully strained it into my bell jars to store in the fridge
although I did test it and try a little bit just to make sure that it was good and it was delicious.
So that is all for today's video thank you so much for being here and for watching
I really appreciate it and I hope that you have a beautiful day and I will see you again soon!
