Hello, I'm Sakura Shakujitakora.
Today, I made fried chicken using seasonal lotus root, which is 120% delicious.
I understand that you are worried about how to eat lotus root.
However, if you watch this video, you will not be confused about how to eat lotus root.
Moreover, you can't eat a lot of it, so it's perfect when you want to eat fried food, but you don't have enough calories.
It's perfect for side dishes, snacks, and snacks, so please try this recipe.
Now, let's start cooking!
First of all, today's main ingredient is the preparation of lotus root.
Today, I will cook with 200 to 250g of lotus root so that it is easy to make.
I will write down the seasoning when preparing in the summary section.
The skin of the lotus root is thin and does not remain in the mouth at all, so it is okay if you wash it thoroughly without peeling the skin.
Please wash it thoroughly so that only the soil and dirt do not remain.
After washing the lotus root, cut off the water and cut it in half lengthwise.
This is a little big, but let's cut it 1cm to 1.5cm wide and thick.
Cutting it a little bigger will be the point of today.
I tried frying it in various sizes, but this rugged feeling was the best balance between the fluffiness of the lotus root and the crispness of the surface.
In addition, it is easier to fry if the number of pieces is small.
Cut the lotus root like this.
Even if it gets a little thick, you can eat it raw, so it's okay.
Fry it and taste the thickest one.
Let's take it easy.
When all the lotus roots are cut, prepare a plastic bag and put the cut lotus root in it.
After putting all of this in a bag, add the seasoning as it is.
1 tablespoon soy sauce
Then add 1 tablespoon mirin
Rub this well so that it goes all over the surface.
If you rub it too much, the lotus root will be broken, so it's just right.
I don't know if it's just right.
The image is to mix it in a bag while putting air in the bag.
I don't know.
It's perfect if it goes all over the surface.
Then leave it for 5 minutes and let the taste blend in.
If the base taste is too strong, you won't know the taste of the material and you will eat it.
This is just right.
In the meantime, I will make a special homemade spice.
This is really delicious.
1 1⁄3 teaspoons of salt
1 1⁄3 teaspoons of sugar
3 pinches of ajinomoto
Then use curry powder.
Curry powder contains only spices based on the raw material.
It doesn't contain salt or flour.
If you put too much of this, it will taste like curry.
Curry powder is really this much.
It's okay to put a little.
If you mix this quickly, the homemade spice is complete.
This is really easy and delicious, so it will be the main seasoning this time.
It's a delicious all-purpose spice even if you put it on boiled potatoes and eggs.
To be honest, this is delicious and very versatile, so you won't be able to buy commercially available spices.
Next, prepare the potato starch to be applied to the surface of the lotus root.
Prepare a large bowl and put a lot of potato starch in it.
I'll put it in two times today, so it's about 2 tablespoons.
If it's not enough, I'll add it later, so it's okay.
I'll explain why I'm using a bowl in detail later.
Finally, prepare a pot to fry.
The trick to making fried food easier and delicious is to fry little by little in a small pot.
If you try to fry a lot at once, you will use a lot of oil.
There is a big difference in the frying time of the ingredients to be put in at the beginning and at the end.
It's hard to clean up and it's hard to make it delicious.
I recommend that you divide it into several times in a small pot.
I will write the method of processing my fried oil in the summary column, so please refer to it if you like.
The amount of oil is roughly this much.
Even if two lotus roots overlap, it feels like there is about one oil.
But SAKURA, I think it's a little wasteful because it seems to be difficult to put oil.
But on the contrary, it's a little difficult if the amount of oil is small.
If the amount of oil is about one ingredient, the temperature of the oil will be stable, so there will be less uneven frying.
It's a little difficult, but I'm waiting for a delicious fried food, so let's do our best together.
When you put the oil in, turn it to low heat and warm the oil slowly.
Another way to make fried food easier is to use a thermometer.
I often say that it is the amount of bubbles in the chopsticks, but I honestly don't understand it at all.
The temperature of the oil is quite different, so I recommend using a thermometer.
This will not fail.
While warming the oil, add potato starch to the surface of the lotus root.
By adding potato starch, a crispy texture is created on the surface,
and the crispy batter becomes a wall, so you can fry it while sealing the umami of the lotus root.
So it's fluffy.
I'll divide it into two, so when I put in half of the lotus root, I'll shake the bowl firmly.
Just shaking the bowl will make the powder clean, so I'm sprinkling potato starch with a bowl instead of a plate.
You can turn it over occasionally and put it on the whole surface.
It's perfect when it's on the whole surface.
Then I will cook immediately.
If you don't have a thermometer, put a piece of lotus root in it and it will be hot if it rises vigorously,
so it's okay to use it as a guide.
When you are ready, raise the heat to medium-low heat and wait for the temperature to rise.
When the oil temperature is about 160 degrees, raise the lotus root.
Tap the powder and then put it in the oil.
It's perfect if you can hear the sound when you put it in the oil.
If you can't hear it, the temperature is low, so please warm it up a little more and then put the rest in.
When everything is in, let's fry it for about 3 minutes.
I will also prepare a bat and knitting that I will use later.
If you don't have it, put kitchen paper on a plate and stand by to drain the oil.
If you put it in and touch it right away, the batter will come off, so don't touch it for about 1 minute,
and after 1 minute, peel off the stickiness and turn it upside down.
Let's fry it for 3 minutes so that there is no unevenness.
Adjust the heat to medium-low heat or low heat depending on the temperature occasionally.
It's perfect if the whole thing is this beautiful fox color after 3 minutes.
Doesn't this alone look really delicious?
Then, in order from the small ones, cut the oil firmly and pull it up to the knitting.
This way of eating is light in texture when eaten, so it's great as a snack,
and the spice is exquisite, so you can be very happy even as a snack.
Take the fried katsu once and fry the second time in the same way.
If the fried katsu remains, the fried katsu will burn and become bitter.
It's a bit of a hassle, but let's take it out and fry it.
I have an image that fried food is a bit of a hassle,
but after all, eating freshly fried food has a different taste from the ingredients in the supermarket.
In addition, if you remember the tips of fried food, the preparation is surprisingly small,
so you can make it in time compared to meat, potatoes, and gratin.
Let's do our best to remember the tips together!
This completes the fried lotus root!
And finally, a special effort!
Lightly spread it over the whole,
and sprinkle about half to one-third of the homemade spice over the whole.
This is an image that gives a light flavor and umami to the whole.
It is recommended to eat the remaining half while adding little by little.
This will give you a two-step umami.
I can't wait, so I'll start with the freshly fried one.
Freshly fried is really the best!
It was so delicious that my hands were trembling!
Let's serve it!
Today's point is to divide the fried food into two parts little by little.
Use a thermometer to fry it a little carefully.
With these two points, it will be the most delicious!
Let's eat!
Cheers!
After all, the sour lemon sour goes best with fried food.
Ah, it's delicious!
The crispy texture is also really good!
Delicious!
This is also really delicious!
Crispy and fluffy!
At the end, it has a sticky lotus root feel, and it's the best!
Hmm!
Delicious!
Hmm!
Delicious!
Thank you for the food today!
See you again!
It was SAKURA, the foodie!
This is my favorite way to eat lotus root!
You can eat it as a snack or as a snack, so please try it!
Bye bye!
