#Sparkling wine
Rathbunny is a sparkling wine from Sussex in the very north-west of England, and this one is a Blanc de Blanc.
Blanc de Blanc means white from white, so whenever you have Blanc de Blanc, it's white wine from white grapes.
You can have Blanc de Noir, which is white wine from red grapes, and you can't get the other around.
But this basically means that it's entirely Chardonnay. 100% Chardonnay. Very, very fizzy.
So this estate was created in 2010 by an English couple who lived in London for a few years, and they started in 2010.
I just dropped that on myself. That's okay. It's white.
They started in 2010 and waited 8 whole years before releasing their first wine, so it's super, super well-looked after vineyard.
This one, you can really hear the things. You can really hear the sparkling wine. You can just hear it sparkling, bubbling away.
Oh, that smells really good.
It feels like buttering to me.
It's like eating dairy without having to eat dairy.
I'm just going to drink it. I'll tell you about it later.
That is good sparkling wine.
Oh, that is really good sparkling wine.
The mousse in it, as we heard the bubbles, really, really fine bubbles and lots of them.
It's a different type of fizz to other sparkling wines.
When you first have it, it's very big and fizzy.
This is really subtle, creamy fizz.
When you talk about wine, it's like when people talk about babies and say they're 36 months old and have to do the maths.
This has been aged for 36 months, which is 3 years.
It means that it's got a lot of aging behind it. It's gathering up all those complex flavours.
It's got malolactic fermentation, which means that you're getting all that creaminess.
Oh, that is wonderful. It's got green apples, apricots, honeysuckle, cheese, cream.
Loads going on inside that.
That is really, really beautiful.
And a really, really heavy bottle as well.
Delicious. Yeah.
