Hello! Welcome back to my channel, Devina Hermawan.
Today, we'll be making Braised Meatballs.
It's a great family menu. Adults love it and the smooth texture is also suitable for kids.
You can enjoy it with rice or potatoes just like Selat Solo.
Here, I'll make two version: as a side dish for adults and as a complementary feeding for 6mos and up babies.
To make it more practical, I'll cook with Beaba Babycook Neo Terracotta.
Here are the ingredients. The main ingredient is beef. You can mix or replace it with chicken.
Other ingredients are breadcrumbs that we'll soak with water or milk.
There's also sautéed onion, egg, cornstarch, and seasonings like salt, pepper, etc.
I've prepared a white paste to braise. It's garlic, shallots, and candlenuts that's blended with oil.
Find the complete recipe in the description box.
We also need tomato, oyster sauce, sweet soy sauce, and nutmeg powder for aroma, to taste.
Then, beef stock powder, pepper, and celery. The celery is optional, so it's okay if you don't have it.
Here, I'll also add vegetables: carrots, green beans, and fried shallots.
You can use others that you like, such as broccoli or zucchini.
Before grinding the meat, I'll soak the breadcrumbs with water, but you can also use milk.
Then, just let the crumbs soak all the liquid.
First, we'll make the meatballs. I use a whole cut of beef, but you can use ground beef.
When cooking for kids, especially babies, I prefer to grind it myself to make sure everything is sanitary.
To grind the meat, I'll use Beaba Babycook Neo Terracotta.
It's a food processor that can not only blend food but also steam, heat, and defrost food.
Moms can safely grind raw meat here because the container is made of glass.
Glass won't smell or stain. Moreover, the steam function can be used to sterilize the container with hot steam.
First, slice the meat. I'm using beef fillet.
At times, there's some silver skin left. Trim it so the meat's texture is more tender.
Silver skin tastes rough. If you're cooking for kids, it's better to remove it because they may choke on it.
Now, add the meat into the Beaba Babycook Neo Terracotta.
Add seasonings: salt, stock powder, pepper. We usually don't add salt for babies under 1 year old.
Then, just grind it. You can adjust how smooth you want it to be.
For babies and kids who can't chew yet, you can grind it until it's very smooth with this blender.
Then, you can add other ingredients into this food processor.
I want to leave some texture, so this is enough. We'll mix it with other ingredients in a bowl.
So, we won't blend it anymore.
Don't worry. We can remove the knife to make sure that the container can be cleaned thoroughly.
Look at this texture.
Then, add the well-soaked breadcrumbs, sautéed onion and its oil, egg, and cornstarch.
Mix well.
Mix it thoroughly until it becomes sticky so the meatballs are smooth, firm, and juicy, not coarse.
Once it comes together and become sticky, prepare the pan and heat the oil.
Shape it into balls and pan-sear them. By pan-searing, the meatballs won't be perfectly round.
If you want it to be perfectly round, you can boil or deep-fry the meatballs instead.
But by pan-searing them until they brown, they'll be more fragrant than if you just boil them.
You don't have to cook it thoroughly. Once the surface is browned, you can set them aside.
Remove the meatballs slowly from the pan. We didn't add too much flour, so the texture is smoother.
If there's too much flour, they'll be firmer and less juicy.
In the same pan, sauté the white paste on medium-low so it's cooked evenly and not burnt.
Once it's fragrant, slice the tomato.
Add the tomato along with the celery. Sauté for a moment, then add water.
Add sweet soy sauce, oyster sauce, and beef powder. I won't add salt since it may become too salty.
Add nutmeg powder, to taste. Use just little bit. Then, add pepper, but skip it if your kids don't like it.
Then, stir.
Now, cook for about 10 minutes on medium heat...
...so the meatballs are cooked thoroughly and the flavor of the broth comes together.
While waiting, prepare the vegetables. I'm using carrots. Simply slice it like this.
Slice the green beans into the same size. You can use other vegetables, too.
Steam the carrots and green beans. I'll use Beaba Babycook Neo Terracotta.
It's versatile because you can blend, steam, etc. with it. It's also easy to use thanks to the one-click button.
It's a great appliance for moms to prepare complementary feeding for babies, 6 months and up.
Only 1 button, only 15 minutes of cook time.
I'd like to share the recipe for the porridge version. To be practical, just use regular white rice.
We can steam the rice along with the veggies. Because we steamed the veggies, they're already cooked.
But, you can cook it with raw vegetables, too.
Then, blend the rice according to the baby's needs. For young babies, use porridge instead of rice.
But, if the baby has learned to eat textured foods, you can use rice just like this.
I like that the meatball still has textures but it's not coarse, so it's tender and juicy, not dry.
It's fragrant and savory.
The broth is sweet from sweet soy sauce and the meat broth tastes rich.
You can keep the cooked meatballs in the freezer in an airtight container.
When you're about to serve it, just heat it up. It's so practical to cook this menu for your kids.
