Hello! Welcome back to my channel, Devina Hermawan.
Today, we're making Currywurst. It's a German Sausage dish, but the flavor has been adjusted to our palate.
It's a simple sausage dish topped with tomato sauce that has a curry aroma.
It's usually served with French Fries. To complete the dish, I'll also make Bavarian-style Cabbage.
Here are the ingredients. First, we need sausages. You can use any kind of sausage you like.
For the Curry Tomato Sauce, we need ketchup, oil, onion, and apple juice.
I use apple juice box. If you don't have any, skip it.
We also need curry powder, Worcestershire sauce, lemon or lime, and chili sauce or paprika powder (optional).
You can make your own French Fries. I use frozen ready-made ones. I just have to fry it.
For the Bavarian Cabbage, we need white cabbage, butter, and cumin (skip or use other spices you like).
First, let's make the Sauce.
Finely chop the onion. You can also blend it, just as long as it's cut into small pieces.
This is so the onion can add intense aroma to the sauce and so we don't have to blend the sauce anymore.
Then, heat the oil and sauté the onion until fragrant. Sauté until it's a bit browned to add flavor to the sauce.
Then, add the curry powder and ketchup in.
Different brands and freshness of the curry powder will dictate the intensity of the curry flavor.
You can try adding 1 tbsp of curry powder first, then add more as needed.
It'll be hard to tone down the flavor if it's already too strong.
Cook for a moment until fragrant. Look! The Sauce is a bit oily now.
Now, add the other ingredients. I use apple juice box. You can replace it with a little bit of sugar.
Add chili sauce, Worcestershire sauce, and a bit of lemon juice.
Then, add water. To make it extra savory, you can add chicken powder, etc.
Then, continue cooking on low heat.
Currywurst is usually a bit spicy. It's also spiced due to the curry powder.
I use chili sauce to add heat here, but you can also use chili powder or cayenne pepper.
Cook for a moment. Pay attention to the consistency because after it's cooled, it'll thicken further.
Now, I'll prepare the cabbage. Remove the core, then slice the leaf.
Don't slice it too thinly so you can still get a good bite.
Next, heat the oil and add the cumin in the pan. Cook for just a moment. Don't burn it.
Add the cabbage in and stir-fry until it's a bit browned. This will make the cabbage really fragrant.
The cabbage is really fragrant now.
It's usually used as a replacement for onions in non-onion vegan dishes due to its distinct aroma when cooked.
Next, add water. We'll braise the cabbage. After, it'll have a soft texture.
Season it with salt, pepper, and sugar.
The cabbage doesn't have to be heavily seasoned. It should taste mild as the sausage and Sauce are flavored.
Add butter and lemon juice to add freshness.
Now, lower the heat and continue cooking the cabbage until you get a soft texture.
Other than this style of cabbage, you can make Sauerkraut. But, it takes longer to make due to the fermentation process.
Now, let's prepare the sausage. You can use it as is, or you can score it if you like some crispy bits.
You can pan-fry the sausage with some oil like this. You can also bake or deep-fry the sausages.
Other than French Fries, you can serve this dish with Butter Rice or Mashed Potatoes.
The Sauce has a complex flavor. It's similar to a BBQ Sauce, but it's spicy with curry aroma.
It can be a good, exciting option for a Sauce.
The cabbage is soft, fragrant due to the butter and cumin, and also fresh thanks to the lemon juice.
