Now we're going to do a seasoning on our prawns. I have with me over here 10 pieces of prawns.
I've already taken off the shell as well as taken off the vein. Total weight of the prawns with the
shell on is 250 grams. With the shell off, they are 130 grams. For the seasoning, add in 1 third of a
teaspoon of salt. Add in a few dashes of white pepper and mix them up really well. After we are
done with the prawns, I'll show you how I prepare the eggs. Now we'll prepare the eggs. I have with
me over here 6 whole eggs. To make the eggs really silky smooth, we'll need corn starch solution.
For the corn starch solution, we'll have 20 milliliters of water, half a teaspoon of corn
starch. If you do not have corn starch, you can always replace this with tapioca starch. It's okay.
Add it in. Mix it up well and we'll pour the solution into the eggs. Pour the corn starch
solution into the eggs. Add in half a teaspoon of salt. Add in a few dashes of white pepper
and mix them up well. Once you mix them up well, we'll go and cook our dish.
Now we'll fry our prawns first. Over medium heat, heat up your wok. Add in a suitable amount of oil.
Pour in your prawns. We just need to cook this to 90% done, which means as long as we don't see
any graininess, they are okay. The reason why we don't cook the raw prawns together with the eggs
is because by the time the prawns are cooked, the eggs might be overcooked. So prawns are almost okay.
Just a little while more. So once you don't see any graininess on the prawns, we'll just
remove the prawns from the pan and add it into our eggs straight away like this. Now we'll turn
the heat down to medium or medium low. Add in a suitable amount of oil. Give your eggs a little
whisk and pour everything in. Now we just need to push this. Let all the liquid flow down.
If the wok gets too hot, you can always try to lower down the flame a little. Just grip the sides
of the wok. Slowly push them. You can also spread them out a little so that they will cook better.
This is a super easy dish and super delicious to cook. With this alone, you can actually have a
meal together with your steamed rice. It's very important not to overcook this to enjoy the
smoothness of the eggs. Now these eggs are done. Turn it off. Sprinkle some spring onions over it
and we'll put it on our serving plate and it's time for our lunch.
And now the dish is done. Let's have a taste. I simply love the fragrance from
eggs. Let's try the egg first.
Very silky, very smooth. The seasoning is done just right. The prawn, crunchy, not overcooked.
