Be sure to cook.
Today we're going to be doing
Meatball Thugs.
We're going to do everything
homemade.
I'm going to add a little Creole seasoning
inside of here.
I'm going to give this a great stir.
That does nothing for too long.
I hear you.
Yes.
That is wonderful.
So, that was about
45 minutes.
I'm back.
Welcome back to another episode
of Be Sure to Cook.
Today we're going to be making pepper steak
with black bean sauce.
So stay tuned and we're going to do this.
I made
a similar dish before
with pepper steak.
But the pepper steak that I made
was with a red sauce.
This time it's with a brown sauce.
It's a black bean sauce.
But this time right now I've got some
beef here and this is
a stir fry beef.
So it's easier. It's already been
cut for me in strips and all I'm doing
is just cutting them up a little bit.
Instead of big long strips
get half of a strip and
getting
stretching it out a little bit
so we don't have big long pieces of meat.
So, this is a
stir fry so it's going to stir up real
fast but right now it's raw.
I've already
took the time to rinse off the steak.
I patted it dry
and now I'm going to marinate this
and we're going to be getting together. We've got to cut up our vegetables
because all we're going to be using
today is peppers
and onions. That is it.
And we're going to fry this in garlic
and all kinds of delicious things.
So let's do this. Let me go ahead and cut up the steak
and I'm going to show you how to marinate it.
Okay, so I've got
some meat tenderizers and I'm just going to go ahead
and throw over my
meat. You know, just
a generous amount
and you want to just massage that in.
Okay, this is
fresh chopped garlic that I chopped
up and diced. I'm going to add about
a teaspoon of this
because we're going to be using this
when we start cooking. You know, I like
a lot of garlic. Then we got
some low soy
soy sauce
or you can get the regular soy sauce. It's up
to you. I shake it a little bit. I'm going to
open it. I'm going to add about
a teaspoon of that in there.
And then I'm
going to mix all this up.
Okay, before I mix this up, I'm going to take about
a teaspoon
of
cornstarch and I'm going to
put that also in my meat
and let's get to mixing this up.
You want to make sure all this is
incorporated really good and you want to let this
sit for at least 30
minutes to an hour
because
while you're putting the cornstarch in there,
the cornstarch has to be in there for the
simple fact is, you know,
sometimes when you do beef, it makes
water. This will suck
up the water and make a
nice little texture,
gravy texture and that's what we want.
Okay, we have
a green pepper and I'm going to do
a little red. So I happen
to do a little red to give it a little color
and I'm going to do the green because
I just love green. We're going to
seed all these out and I'm going to cut them
in chunks. Okay, so I've
got my pepper all
torn out and all I'm going to do
is take it and I'm going to
cut it in half
and I'm going to do
bite sized chunks.
You don't want too big of a chunk
and you don't want too small of a chunk.
So this is about good.
I love the peppers
and I'm going to do the same with this one.
I might not need all
this, so I'm just going to
chunk it like this.
Because I did use a whole
pepper of that.
I like peppers.
And then I'm going to do the same again
because you can
cut them any size you want.
Okay, these are about
a nice size both. I'm just going
to mix these and I'm going to put them in my
strainer so I can
strain these and wash these very, very good.
In the meantime, I've got
a half of an onion that I'm
going to quarter.
I like the quarters.
And then I'm going to take the petals
of these because I want these.
And I want, you know, because when you do this with
your sauce and all this stuff, you're going
to want a really good
crunch. You don't want to cook these until they are
terribly over
cooked. You don't want to do that.
You want to cook them where they're a little crunchy
but you want a good sauce to them.
I'll mix them up and make sure I got each
petal and I still got
different colors of peppers.
Now it's time to take these to a
bath.
Okay, I've got me a nice
little wok and I'm using
olive oil. So I'm going to use a little bit
of olive oil. That's maybe two
tablespoons of olive oil.
And I'm going to take the
I'm going to take it and I'm going to put it on a hot pan.
And I'm going
to let this
heat up into this pan.
Alright,
I got my olive oil in here and
I've got my pan on really hot.
Now I'm going to start
putting my meat in.
Okay, make a little
garlic. I already had garlic
in there a little bit and the rest of it
I'm using it.
I started dumping my peppers and my
meat and let's get those peppers
nice and cooked.
Okay, I got that wok
on high and
I just keep on stirring this
meat and get those vegetables
nice and tender and
cook that meat. That meat is
nowhere near
done. You see that?
Still raw.
Okay, I have black bean sauce
and I'm adding the rest
of the garlic.
And then I'm going to add
a couple tablespoons of
soy sauce.
And I'm going to mix
all this up.
And then I'm going to
put this with my
steak onions.
Okay, you remember that
water gravy I told you I was going to start
making? That's what I'm looking for.
Because guess what? It's going to go great
with this black bean sauce
and
wonderful
soy sauce that I put in here
and that, of course, you know
with the garlic and all.
And then we're just going to
mix all this up.
Okay, and
this is my black
bean sauce with pepper steak.
And let's plate this.
And the only thing that I
forgot, guys, if you want my
opinion, I forgot
the green onions.
So, you know, you get you
some green onions and I forgot
to get the green onions.
But you get green onions and you
put the green onions on here and that's
black bean sauce with
stir fry pepper steak.
And you season it just like that.
And then you put
it on there. There we go. Look at that.
Here you go.
This is pepper steak
with black bean sauce.
