Today Jamie and I are making a family favorite that is absolutely perfect for busy weeknights: Cheesy Taco Casserole! It is basically like a cozy, baked burrito bowl packed with flavor, and it makes enough to feed a crowd or freeze for later.
Of course, we couldn't do it without our favorite kitchen helpers! Memphis, Eleanor, and Kira were on high alert in the kitchen, making sure we paid the mandatory cheese tax and staying close by for a very special surprise. Grab your 9x13 pan and let's get cooking!
Ingredients 1 pound lean ground beef 1 small onion A few cloves of garlic (or Jarlic) 1/2 to full packet Taco seasoning 1/2 tsp Garlic powder 1 tsp to 1 Tablespoon Oregano 1 tsp to 1 Tablespoon Basil 1/4 tsp Salt 1/2 tsp Pepper 1 and 1/4 cups regular long-grain rice 3 cups chicken broth 1 tablespoon oil 1 tablespoon butter 1 can green chilies 1 can diced tomatoes 1 can pinto beans (drained) 2 Cups Colby Jack cheese (block or bag shredded)
Tips and Tricks 🤠 Flavor Twist: You can easily swap the ground beef out for chicken if you want a lighter protein option. 🍅 Texture Hack: If you don't like chunky cooked tomatoes, go ahead and chop your canned diced tomatoes smaller before tossing them into the pan. 🫘 Bean Options: I used pinto beans today, but black beans or kidney beans work beautifully in this dish too. 🌶️ Heat Control: Adjust the spice level by adding cayenne pepper, dried jalapenos, or even a splash of Cholula to the mix. 🥘 Easy Customization: Think of this like a blank canvas! Top your final dish with sour cream, avocado, extra salsa, or crunch on it with tortilla chips. 🧊 Meal Prep Friendly: This recipe makes 8 to 10 servings and freezes incredibly well, or you can easily cut the ingredients in half for a smaller batch.
Kitchen Helpers Highlights 🐕 Memphis was on dinner support duty early, making sure Mom didn't mess anything up. 🧀 The "Cheese Tax" was collected in full by Memphis and Eleanor right in the kitchen. 🐾 Kira received her cheese tax delivery safely in the office where she felt much more secure. 🥩 The girls got a major upgrade from the cheese tax when they got to test a special batch of unseasoned hamburger meat cooked just for them! 🛡️ Kira bravefully ventured into the kitchen for her hamburger taste-test, making sure Dad was there to protect her.
This video provides a step-by-step guide to making a hearty taco casserole. The creator demonstrates how to combine seasoned ground beef, toasted rice, beans, and vegetables in a 9x13 pan, baking it until the rice is tender and the cheese is melted. The result is a versatile, meal-prep-friendly dish similar to a burrito bowl.
Look! Ingredients!
And as always, best kitchen helper ever!
You want to help me make dinner Memphis?
Cool, I need some support for this, cause I don't want to mess this up.
Welcome back to Snow Dogs Cooking, where if I can cook it, so can you!
It's dinner time, yet again, which means we gotta figure out what to make for dinner.
So, I decided I'm making taco casserole.
If you've never had taco casserole before, you should try it, it's actually pretty good.
I've done taco casserole, enchilada casserole.
Let me know if you want to see some of the other casseroles or hot dishes, whatever you want to call them.
This one I'm actually making in a 9x13 pan.
Most of the time I use my actual casserole dish, but we need to cover this in foil
and it works better with a 9x13 pan.
So, let me tell you what you're gonna need to make this.
Everything is also listed down in the video description below.
Before I do that, look! The oven is not on.
Second best kitchen helper ever, is right there.
Third best kitchen helper ever, is already hiding in the office.
I will bring you some cheese tucks later.
So, here is everything you are going to need.
You're gonna need a pound of ground beef.
You could also use chicken, if you want to.
You're gonna need an onion, we're gonna dice that up momentarily.
You're gonna need a few cloves of garlic or jarlik.
We're gonna need taco seasoning, garlic powder, oregano, basil, salt and pepper.
A little bit of cayenne, if you want it a little bit spicier as well.
We will need one and a quarter cups of rice.
Just a regular, not a minute rice, like a regular long grain rice.
You could use a jasmine rice, if you really want to.
You will need a can of green chilies, if you don't...
They're not spicy, but if you think they are, leave them out.
You're gonna need a can of diced tomatoes.
Now, you could also substitute this for salsa as well.
But, I like the way it tastes with the diced tomatoes.
So, a can of diced tomatoes and then we're gonna need a can of beans.
You can use black beans, kidney beans. I'm using pinto beans today.
We're gonna drain those and then cheese.
Now, I decided to go with black cheese because it does melt better.
I'm gonna shred this and I think I got it. I think that's everything.
If not, like I said, it will be listed below.
We are going to preheat the oven to 375F.
I have diced up my onion.
I have my pan out here getting warm.
I'm gonna take my pound of lean ground beef and throw it in that pan.
Like I said, you can use chicken if you want to.
We're gonna throw it in here.
Trick to this, throw it in there, let it kind of crispy on the bottom,
then flip it, let it kind of crispy on the bottom, then chop it up.
It just keeps the flavor in. Don't worry, we're gonna add seasoning.
Notice I took it out of the pan. I had a little bit more than a pound.
Before I add seasoning and stuff, I'm gonna make some of this for the dogs.
Unseasoned. Set that aside for the dogs.
I'm gonna put this back in here.
I'm gonna go ahead and start chopping it up and add some seasoning.
Now, before this gets too done,
we're gonna add the diced onions and start cooking those in.
You can add some taco seasoning now if you want.
I'm gonna add a little bit of taco seasoning, pepper, and garlic powder.
How much? Some. Sprinkle it in there.
Oh, and if you're using a really, really lean ground beef,
like I did, because that was what was on sale,
I add a tablespoon of butter to it when I add the onions.
It just kind of gives it a little bit of fat and helps crisp it up a little bit.
And cook the onions.
I'm gonna go ahead and add some taco seasoning.
You know, some. I don't know, a teaspoon?
Also gonna add some pepper.
I don't know, like a quarter of a teaspoon to half a teaspoon,
depending on how much pepper you like.
Hamburger's about done. I'm gonna go ahead and start adding some garlic.
Add as much or as little as you like.
Jamie is not as big of a fan of garlic as I am, so just a little bit of garlic.
Also added a little bit more taco seasoning.
If you're using packet seasoning for this,
you can probably use half a packet, maybe even a whole packet,
depending on the flavor profile you're looking for.
Because, like I said, I used a very lean ground beef,
this really doesn't have to be drained a whole lot,
but go ahead and set it aside and let it drain.
This next part is optional.
This is always how I do rice whenever we're making tacos.
We're gonna put a little bit of oil in this pan,
and we're gonna fry the rice a little bit.
About a tablespoon or so of oil.
Here's our one and a quarter cups of rice.
Right in there. Start stirring it around.
While we're frying the rice,
I'm gonna lightly spray the bottom of this pan with a non-stick spray.
I'm gonna take the three cups of chicken broth
and pour it slowly into this pan.
And try not to spill things.
To this, I'm gonna add about a teaspoon of oregano.
But in reality, I'm gonna add it until I think it's enough.
So, once you make this a few times, you'll get it right.
About that much.
We're also gonna add a teaspoon of basil.
Again, enough until you're happy with it.
Some. That's probably good.
Next, about a half teaspoon to a quarter teaspoon of garlic powder.
Again, depending on how much you want.
We'll just sprinkle some in.
Quarter of a teaspoon to a half teaspoon of pepper.
Or eye it with your heart.
I like things to be a little bit more peppery.
This is also where, depending on the spice level you're going for,
you can add a little bit of cayenne,
or a little bit of maybe dried jalapenos.
You can also add jalapenos at the end and things like that.
Or a little bit of cholula in here.
You can also add those things at the end,
because not everybody likes the same level of spicy.
Stir that together a little bit.
Now we're gonna take the rice and put it in here.
Look. It's nice and toasty.
We're also gonna add the entire can of diced chilies.
Juice and all right into the pan.
Next, we're gonna add our diced tomatoes.
But these are chunky, and I don't like chunky,
so I'm gonna go ahead and chop these up and then add them in there.
Which, yes, is extra and takes an extra step,
but I don't like chunky cooked tomatoes, so we're gonna do that.
We're gonna take our drained hamburger.
Put that in there as well.
Go ahead and stir all this together.
Cheese! I'm using Colby Jack cheese.
Look! Cheese for the cheese tacks!
Now I'm gonna take a little bit of this and stir it in.
And by a little bit, I mean like a handful or so.
And kind of stir it in.
Not a whole lot.
The rest of it is gonna go on top.
Stir that in and then I'll pay the cheese tacks.
Cheese tacks for you!
Now I gotta go find Kira.
I bet I know where she's at.
Cheese tacks for Kira!
That's what we're having!
I got more good... You got it?
I got more good stuff in there for ya!
I got more!
She's like, hmm, maybe.
Forget your beans!
So it was a rinsed and drained can of beans.
Put that in there.
Stir that up as well.
Just realized, I don't think I said that I added the salt.
But I did sprinkle a little salt.
Like a quarter of a teaspoon.
I didn't put a lot in there.
Now, we're gonna take the remaining cheese.
Set that aside. Remember how I mixed just a little bit in there?
We're gonna take some aluminum foil
and we're gonna cover this as tightly as we can.
We want it to be really tight
because we want the rice to cook but not overcook.
Trust the process. I know it looks like a mess.
It's gonna be delicious.
Covered in foil!
Put this in the oven
for about 35 to 45 minutes.
I'm gonna go with a full 45 minutes.
It's almost done Memphis.
Would you like a bite
of the hamburger that I made
specifically for you guys?
No seasonings. No nothing.
Whoa!
Was that good stuff?
I hear pitter patters.
Hi! You like to try some?
Here you go!
Whoa!
Was that better than cheese?
Was it? Was it better than cheese?
Let's go find Kira!
You're in here now?
You came in here because dad will protect you?
Here's some hamburger.
Whoa!
Is that better than cheese?
That's pretty good mom! That's pretty good!
The rest of it is getting saved
to be put on your breakfast tomorrow.
Can you hear it?
It sure sounds like something's happening.
Don't burn yourself!
Take the foil off the top.
It's not done yet.
Now I'm gonna stir and fluff
the rice around a little bit.
It looks like the rice is done.
Stir it around.
Now we're gonna top it
with the leftover cheese.
Sprinkle it all over the top.
Now back into the oven uncovered
for 10 minutes.
Now comes the hardest part.
Wait 5 minutes. Let this sit here
for about 5 minutes.
And then we're gonna top it and try it.
I think it's ready!
You can top it with whatever you want.
I put a little bit of black olives and a little bit of cilantro.
You can always add more
when you scoop it out onto your plate.
That's not wrecking it. You like sour cream.
You're allowed to like the things you like.
I put cilantro and black olives
on mine.
But I made sure to not put those on yours.
But I guess you tried a little bit of the cilantro.
Jamie also added some salsa.
Yes.
We do have some chips as well.
It's taco.
It's like a burrito bowl kind of.
Burrito bowl.
Yeah.
Like a burrito bowl.
Yeah.
You could add avocado.
Whatever you top your tacos with
you could add after or add during.
So it's kind of versatile.
It's a casserole. Add what you want.
The rice is fully cooked though.
I was nervous it wasn't going to be. And it is.
It is.
I was nervous it wasn't going to be.
We're gonna eat this.
That was actually pretty good.
I may have to make a version of this
where you can make it in the Instant Pot.
Because I think I could do that.
I also want to make a version of it
where instead of the roasted tomatoes
I do try it with like a hot sauce
or a salsa.
So I have ideas. But that was actually
really good. Top it with all your favorite taco stuff.
It's gonna feed a lot of people.
You can also freeze this.
You can take it, put it in your little containers
and put it in the freezer.
I believe it makes 8 servings or 10 servings.
Something like that. But go ahead and freeze some of it
if you make a big one. Or cut the recipe in half
if you want to.
Alright you guys. We hope you enjoyed today's video.
As always, thanks so much for watching.
Thanks for subscribing. Stay positive. Dream big.
And we will see you again soon.
Goodbye buddies!
