It is October which means it is apple season! I know everyone loves pumpkin spice things but I am not a fan, so we are going to make some donuts instead. Because a lot of you guys apparently do not like frying your donuts, I am going to show you how to do these as baked apple cider donuts. It is a little bit easier for all of you and they taste absolutely amazing. We ended up with 15 perfectly soft and sweet donuts, and the house smelled incredible. Our friend Greg even walked in right as they finished and said it smelled like donuts and soup in here!

The secret to these baked apple cider donuts is taking regular apple cider and reducing it down on the stove. This gives you all that delicious fall flavor without making the donut batter way too wet. Once they are baked to perfection, we dip them in melted butter and coat them in a cinnamon and cardamom sugar mix. I prefer using cardamom instead of apple pie spice because apple pie spice usually has nutmeg in it, and nutmeg is toxic to dogs. With our kitchen helpers always nearby, I like to play it safe!

Speaking of our kitchen helpers, Eleanor and Kira were right there hoping for a taste. Since they could not have the actual donuts, I tried giving them some raw apple pieces. Kira totally rejected her raw apple piece and made me go get her a frozen one instead. She loves her freezy apples because it is like apple ice cream to her! Jamie also jumped in to help me pipe the donut batter into the pans, making this a super fun and easy baking day for all of us.

Ingredients
1 1/2 cups apple cider (or 1/2 cup concentrated cider)
2 cups flour
1/2 cup white sugar
1/2 cup brown sugar
1 teaspoon baking soda
3/4 teaspoon baking powder
1 1/2 teaspoons cinnamon
1/2 teaspoon cardamom
1/4 teaspoon salt
1 large room temperature egg
1/2 cup room temperature buttermilk
2 tablespoons melted butter
1 teaspoon vanilla extract

Topping Ingredients
6 tablespoons melted butter
1 cup white sugar
1 teaspoon cinnamon
1/4 teaspoon cardamom

Tips and Tricks
🍏 If you can find apple cider concentrate at the store you can just use half a cup of that and skip the reducing step entirely!
🔥 When reducing your regular apple cider, keep it on a low simmer for about 20 to 30 minutes and stir it every once in a while until you only have half a cup left.
🥛 You can easily swap out the buttermilk for regular whole milk as long as you make sure it is at room temperature.
🥧 If you want to use apple pie spice instead of cardamom, use 1 teaspoon of cinnamon and 1 teaspoon of apple pie spice for the batter. And for the topping 3/4 tsp of cinnamon and 3/4 tsp apple pie spice. Just remember that nutmeg is toxic to dogs!
🍩 Put your mixed batter into a zippy bag and cut the corner off so you can easily squeeze the dough right into your donut pan without making a huge mess.
🧈 Wait for the baked donuts to cool to the touch before dipping them in the melted butter and sugar mix so you do not burn your fingers.
