How to make Royal Pancakes from Yo-Kai Watch Blasters.

Tangy orange syrup:
1/2 cup sugar
1/4 cup orange juice
1 TBL corn syrup
1 tsp lemon juice
Orange gel color, optional

Cream:
1/3 cup whipped cream
1/2 TBL powdered sugar

Pancakes:
3 eggs
1/2 cup sugar
1/2 cup cake flour
Berries and mint, to serve

For sauce: in a small pot, place sugar, orange and corn syrup. Bring to a boil, stir and turn off the heat. Pour into a small bowl or measuring cup. Stir in lemon juice and optional gel color. Refrigerate until cool.

For “pancakes”: Preheat oven to 375 degrees. Place eggs and sugar in the bowl of your mixer. Place bowl over a pot of boiling water and whisk sugar and eggs until sugar dissolves and mixture is “baby bottle” warm. Whisk with electric mixer until super fluffy and triples in size. Consult video for what it should look like.

Sift on flour and carefully fold in using whisk. Pour cake batter into an 8x8 silicone pan, or parchment lined pan. Tap on the counter to even out the batter. Bake for 10-15 minutes or until top is golden brown and a toothpick inserted comes out clean. Allow to cool completely.

To assemble pancakes: Cut out desired rounds from your baked cake. Place a cake round on a serving plate and brush with syrup. Top with another cake round. Brush the top once more then spoon on a little more sauce. Finish with a dollop of whipped cream and garnish with berries and mint. Serve immediately.

In a small pot goes orange juice, sugar, and a little corn syrup. Bring it to a boil, stir, and then take off the heat. Pour it into a small measuring cup and add some gel color and a little bit of lemon juice. Refrigerate it while we make our pancakes. Bring a pot of water to a boil. Place the bowl of your stand mixer on top, and in goes sugar, and some eggs. Whisk this over the water until your sugar dissolves and the mixture is baby bottle warm. Then use your stand mixer and whip it good, real good, it should look like this. See the ribbons? Then you can sift on your cake flour. Carefully fold it in using your whisk. You can use a spatula too, but why dirty another utensil? Pour your batter into an 8x8 silicon baking pan. I like this so I don't have to line it with parchment paper. Whatever pan you use, tap it a little so the batter is as even as possible. Bake it 10-15 minutes or until golden brown on top. Use the toothpick test if you like. I don't usually do this since I'm a cake whisperer and can tell a cake is done just by looking at it. Let it cool completely. Then you can punch out rounds. See? Pancakes! Save the scraps for snacking. Here's what else you need to assemble your Regal Stack. To make a stack, place a pancake on your plate and brush it with a little bit of syrup. Top with another pancake and drizzle on more syrup. Top it with some whipped cream, sprinkle on some berries, and finish it with mint. It's done!
