Hi guys, welcome to my kitchen.
Today I'm making a very traditional Latvian slash Russian dish.
It's called galuptsi,
which is stuffed cabbage with meat over tomato sauce.
So it's absolutely amazing, very healthy and you can make a lot of them
and store them in the fridge and they will last you a couple of days.
Okay, the ingredients we're going to be needing are the following.
We need three medium carrots, three cloves of garlic,
parsley, a couple of bunches.
Some dill, one medium onion, one pepper, you can also use red pepper,
here I've got chopped tomatoes and you can also use the chopped ones
from the tin, 100 grams of half boiled white rice, salt, pepper,
one egg, sour cream, one large cabbage and here I've got a mix of meat
and I've got about 400 grams of pork mince and about 500 grams of beef.
Now, you can just use pork or beef.
I'm using combination, so it's a bit more juicy.
Okay, before we start making galuptsi,
we're going to need to boil our cabbage.
I don't have a microwave. That's the quickest way.
You can put it in the microwave
for about 20 minutes, and it will be done.
I'm going to boil it in a pan.
Now, before we start boiling,
we need to just give four cuts around the cabbage,
just to make sure that when we start to take off the leaves,
they come off easily and don't break.
So now we just gently...
Break each leaf, try and make sure they come
out as whole, just try from the top and just
like that.
We do the entire cabbage.
I've separated my cabbage leaves,
now we're just going to put them into our boiling pan.
Try and make sure when you separate
the leaves they don't break and we leave them boiling
for about 20 minutes.
So we've grated our carrots and our pepper and chopped our onion right
here, which I'm frying now for a little bit until it goes golden.
Then I'm going to add my carrots and my grated yellow pepper.
Again, we'll add a bit of salt for taste.
Okay, my cabbage is done.
I've just let it cool down and now we're going to do our filling.
So I've chopped some parsley up and some garlic.
Now our carrots and onions with pepper are done,
so we just add half the mixture.
The other half is going to go for the sauce that goes over the galuptsi.
So just leave that aside.
We add
our rice.
Now we're
just going
to season it.
You can use any other spices that you want to put in, I just like
to do it classic, you know, salt and pepper, always tastes good.
Now you just give everything a good mix,
I like to use my hands because then it gives it,
you know, some air and they taste really, really lovely.
So let's get started and mix.
Okay, our mince is done, it looks so colourful,
you get a bit of green, orange, yellow, amazing.
Okay, so now I'm going to start doing my sauce
and we'll leave this aside.
Okay, so I've put my carrots and onions there. I'll put one cup of
tinned tomatoes or chopped ones and then I'll also add about
one cup of water. Now we just give that a mix
and let it boil
for about 10 minutes.
I'm ready to stuff my cabbage,
so I've let it cool down and we take each leaf.
Now one tip I'm going to give you is that you need
to cut off this end bit very, very
carefully because it's really hard
and it makes it harder to fold them and it doesn't
taste very good.
So just gently cut off,
it's fine.
Now we'll just place
our cabbage leaf like that,
take a massive spoon, fit a lot in here
and then we just fold them
so we put these bits inside.
So we're doing that with the rest of our cabbage
and I'm going to place them actually in the
sort of deep baking tray and they'll kind of cozy together
when you pour the sauce over
as well.
They look and smell delicious.
Okay, I've placed all them together nice and cozy.
Now I'm going to fry them from both sides
and that's just my preference, you don't have
to do that.
And I like to fry it in butter.
It tastes very delicious
and gives them that sort of brown, yummy colour.
I'll fry them from both sides,
put them back there and then I'm going to add the sauce.
Okay, so I've just fried them lightly.
And then we're just going to pour our sauce everywhere.
Smells so good.
You can add a bit more water
because you need to make sure that they're covered halfway through.
Just spread that around.
I've preheated my oven to gas mark 6.
And we're going to put them in for about 40 minutes.
Okay?
Okay, my golubtsi are ready.
It smells absolutely amazing in the house.
I'll just take them out gently.
It's really heavy.
Okay.
Look at that.
Beautiful.
Now I'm just going to serve it on a plate for you guys.
Okay, all ready.
I've just put some dill on top because it's very traditional.
And of course sour cream.
I don't know if you can hear me.
Beautiful finished golubtsi.
Now there's some juice as well.
You can put more juice if you want.
Looks amazing. I'm just going to cut it so you see how it looks inside.
You can see the meat. You can see a bit of carrot.
Oh, it looks amazing. Smells so good.
Now, I'm just going to go and eat it now.
You know?
Guys, I really hope you enjoyed this video.
They do take some time to make, but I've got a whole pot of them.
Two golubtsi is enough for one person.
