This dessert is a spring classic — strawberry and rhubarb crisp.
But here the fruits are going to be spiked with a little bit of orange zest and some
pointe croix, which brings a whole other dimension to the dessert.
Then, they're topped with a luxurious macadamia nut streusel.
The best part, though, is that even though this dessert is quick and easy to make, it
looks absolutely gorgeous and festive.
Let's make our crisp.
Grate the orange zest using a microplane grater.
Place the strawberries in a large bowl.
Add the rhubarb.
Then sprinkle the whole thing with the sugar and the cornstarch.
Drizzle the pointe croix all over it.
And as a last touch, the orange zest.
Stir everything until it's well blended.
We want the cornstarch, basically, to be well distributed throughout the fruits, because
those fruits are going to release a lot of juice, and the cornstarch is going to thicken
it a little bit.
Then just put the fruit in your prepare mold.
You want to even them out and push them in a little bit so there are no gaps.
Now we need to make our crisp toppings, so put the flour in the bowl of a food processor.
Add the sugar and a pinch of salt.
By the way, tobinado sugar is very coarse, and it's going to give our topping the most
wonderful crunch.
Close your machine and process just for about 15 seconds to get everything well blended.
Now you can add the cold butter, and you're going to pulse until the butter forms a small
crumb.
Let's have a peek.
As you see, the butter is in fine crumbs, but now we want the crumbs to get together
and be a little coarser.
So we're going to continue pulsing, being very careful that we don't make a dough out
of this mixture.
As you see, our mixture is more chunky now, and the crumbs have come together and are
coarse.
So we are going to now add the chopped macadamia nuts, and we're only going to continue pulsing
once or twice just to get those blended.
That's it.
Now we're going to top our crisp with the crumbs.
This is going to make the most luxurious topping.
Look at this!
The fruits are bubbly, the top is golden brown.
It's ready.
Itadakimasu!
