Never again mushy pasta in the thermomix!
Hi, it's Desi again from my Zaubertopf kitchen.
And today I have a very special episode for you.
Because today we're cooking a one-pot pasta recipe.
That means it's all in the mix pot.
And of course, I'll also explain a lot of things about cooking pasta in the thermomix.
You can find the complete recipe for reading here again at our Zaubertopf club.
I chose a one-pot pasta with vegetables.
Of course, I'll also tell you about the ingredients in a moment.
And all you need for this is pasta.
Red and yellow peppers.
A few carrots.
Parsley.
An onion.
A clove of garlic.
Vegetable spice paste.
A few spring onions.
Salt and pepper.
Creme fraiche.
And a little oil for steaming.
I say, we'd best start right away.
And if you haven't subscribed to the channel yet, it's best to do it right now.
First, we chop the parsley.
We'll need it later for garnishing.
That means once in the mix pot.
And then it comes to a boil for three seconds.
That's it.
We'll fill that up, because we'll need the parsley later.
I'll show you again briefly how small it is after three seconds.
I think it's crazy again and again.
And write in the comments what your experience with one-pot pasta dishes is like.
Can you handle it well or does it always happen to you that the pasta is too mushy or too hard?
I'd be interested to know.
But after this episode, it definitely doesn't happen to you anymore.
Because after that, you always have the perfect pasta.
If there's still a little parsley in there, it doesn't matter at all.
Because it's a one-pot dish.
That means the sauce will simmer with it as well.
And parsley also gives you a nice taste.
Next, we add the onions.
And the garlic.
And mince everything for five seconds on level five.
On five.
And if you're wondering why I'm always looking at my phone in between.
I just let myself go through the recipe step by step.
So that I definitely don't forget anything here.
Because that would be a bit stupid here, of course.
And of course you can do that with all club recipes.
And if you start the cooking mode, it's particularly easy.
Because then you just have to keep clicking.
So.
And I'm going to do that here too.
I'll show you once so you can see how it works.
I'm turning my phone for it.
Then you can see me quite well that you have the Thermix display on your phone, so to speak.
And then add olive oil.
And then the onions are sautéed and they are definitely quite hot.
I'm already starting to turn my eyes on here.
At 120 degrees.
If you have the TM31 at home, then you just take the Varoma button.
And level one.
Oh, by the way, it says without a measuring cup.
And I'll take that off again very briefly.
The onions and the garlic are already well sautéed.
It smells really good here and the whole thing looks like this now.
Next we add paprika.
We've already cut the carrots into slices.
Then spring onions are added.
That looks really good.
I think it's going to be a really delicious pasta.
And the whole thing is then set to three minutes again.
Then again at 120 degrees.
As I said, if you have the TM31 at home, the Varoma button.
Now it's very important, because we still want to define the pieces,
the Thermix should only stir and not crumble.
First we press the left barrel here so that the Thermix
just stirs with the blunt side of the knife.
And we do the whole thing at level one.
Oh, that's not true. It should be at the soft-boiling level.
Sorry, back again.
You can change it at any time with the Thermix.
I want to say something about the soft-boiling level again.
So whether you have the soft-boiling level or level one,
that's not the big difference.
But if it's in the recipe with the soft-boiling level,
you definitely like to use it.
Now you can see that after three minutes,
our vegetables are still really nice and chunky.
And that's exactly how it should be.
And we're going to continue with the one-pot story,
because we're going to add water now.
That's tip number one with pasta.
Always boil the liquid first.
Either water or sometimes there are one-pot dishes
with tomato sauce or something.
Then it's usually a mixture between
passed tomatoes and water.
Always boil it first before adding the pasta.
Then I add creme fraiche,
so that we also have a nice creamy sauce afterwards.
And above all, the pasta also
gives the starch a little bit into the water.
That means it's really a really nice,
creamy consistency.
Then I have our vegetable spice paste here.
Of course, I also add salt to the water
and also a little pepper.
And the whole thing is now
boiled down for eight minutes.
If you still have the TM 31 at home
or the TM 5,
there was no spray protection yet,
you can just put the cooking pot on top,
because then it can evaporate everything well.
Now it is also important again
that you set the left-hand wheel again.
You always recognize this quite well here.
If the left-hand wheel is not set,
you see a mixing knife here
and you press on it to activate the left-hand wheel.
And then there's always a green arrow here.
So pay attention to pasta or anything
that should stay whole,
even for goulash or something.
Make sure that the arrow really lights up here.
And then it goes on again with the soft-boiling stage.
It has about 40 revolutions per minute.
The water is now simmering in front of it
and then the pasta will be added in a moment.
And then I have a few more tips for you
that you should definitely keep in mind.
The water is hot and now the pasta is added.
In our case, these are shell pasta.
And if you're a little insecure here
and you think,
I'd rather like it nice and al dente,
I'll give you a tip here.
Maybe you'd rather set it for one minute less.
And after the time has elapsed,
you try the whole thing.
Because you can always re-set it.
That means adding cooking time
is always no problem at all,
should they still be too bite-resistant.
I stir this a little bit here
so that they are really wet once.
So you should also pay attention to that.
We need 100 degrees again.
Left-hand flow is of course essential here again.
It's still in here with us.
So really always check
whether you have set it.
Now comes the moment of trying
and whether you decide
whether you have to cook a little more or not.
We'll take a look at the whole thing here.
Okay, one minute, but not more.
But I'll show you
what a big pot that is.
And you see, everything is still whole.
Although we had small shell pasta,
the peppers and the carrots.
So everything is perfect.
So, one more minute.
100 degrees.
Left-hand flow.
Always pay attention to the green arrow, as I said.
Soft-boil stage.
And then our pasta will be ready in a moment.
All whole, all whole.
And no mushy noodles.
So it is really possible
to cook perfect noodles in the thermomix.
And so that they are also perfect for you,
I'll give you all the tips again
before you try it.
So first of all,
always boil water or sauce first
and only then add the noodles.
Always look at the packaging of the noodles,
how the cooking time is specified.
And remember,
of course you can always exchange the noodles,
also through whole grain products.
But then the cooking time automatically
always extends.
Then you set the cooking time to a maximum.
Stop the thermomix once after that time,
or it turns off anyway.
Try it once and then decide
whether you have to cook for another 1, 2, 3
or sometimes 5 minutes.
That really depends on the type of pasta.
Then number 5.
Always, always, always make sure
that the left-hand flow is set
and the thermomix only stirs with the blunt side of the knife
and does not crumble.
If you want to have more tips,
subscribe to the channel right away
and best also press the bell.
Then you won't miss any new episodes.
The plate is really hot here,
but I'll try it because I love noodles.
Mmm, delicious.
Add a little more parsley.
The carrot still has a very, very slight bite.
The noodles are great.
And the peppers are great too.
And the sauce is mega creamy.
So write to me when you've made it,
how you liked it.
I'm curious.
See you again in the next episode.
And stop by the club.
There you will find the whole recipe again
to read in detail.
See you next time.
Bye!
