Welcome back to the Green Kitchen!
Today, I'm here with Ngoc Bich, a butcher from Bitaki,
to show you how to make Sweet and Sour Pork Ribs.
Hello everyone, I'm Ngoc Bich, a butcher from Bitaki.
Today, I'm very happy to be here with Mrs. Thao to show you how to make this dish.
Let's get started!
To make this dish, we need 500g of pork ribs,
20g of shallots,
10g of minced onion and garlic,
5g of ground pepper,
50g of sugar,
50g of fish sauce,
20g of chili sauce,
50g of tamarind sauce.
After preparing all the ingredients,
let's get started!
Can you prepare the ribs for me?
Yes.
While waiting for Ms. Bich to prepare the ribs,
I'll make the sauce to marinate the pork.
I have tamarind sauce here.
After buying the tamarind,
I'll add 100g of tamarind and 100g of water.
Then, I'll bring it to a boil and add some salt.
When it's boiling, I'll strain it through a sieve to get the juice.
You can make the juice in advance and put it in the fridge
to make other dishes in your family,
such as hot pot or sauce.
Now, I'll add the tamarind sauce.
For the tamarind sauce, I want to create the color and the color of the sauce,
so I'll add the chili sauce.
I'll add half of the sugar here.
Next, I'll turn on the stove
and stir the sauce well.
After the sauce is mixed well, I'll turn off the stove
and add the fish sauce.
The reason why I prepare the sauce in advance
is that when I marinate the pork or other ingredients,
such as chicken or fish,
the seasoning will be more flavorful.
Now, the sauce is ready.
After washing the pork, I'll marinate it.
The pork is done.
Now, I'll cut the green onion.
I'll cut the green onion into small pieces,
and I'll cut the spring onion into 2 pieces.
I'll put the pork into this bowl.
Next, I'll add half of the garlic and half of the chopped spring onion into this bowl.
Next, I'll add 2 tablespoons of tamarind sauce.
I made it earlier.
I'll stir it well
to let the pork absorb the seasoning.
Ah, Ms. Bich.
Yes?
May I ask you a question?
How do you feel about cooking for many people?
I really like to cook for everyone
and enjoy the food I cook.
What is your favorite food and your passion?
I like to cook crab soup,
green vegetables, spring onion and salt.
What is the secret to cook crab soup and green vegetables?
If you want to cook crab soup and green vegetables,
you should buy fresh crab from the market
and cook it.
The secret to make it delicious
is to take the crab shell out
and fry it in a pot of crab soup.
It will be delicious.
It's simple,
but I think it will be delicious.
I've marinated the pork.
Now I'll put it in the kitchen and marinate it.
I'll put a pan on the stove
and turn it on to make the pan hot.
Next, I'll add cooking oil.
Here is the tamarind sauce.
Can you get me a bowl?
Next, I'll put the pork in the pan and marinate it.
Stir-fry until the pork is cooked.
When the pork is cooked,
I'll add the rest of the tamarind sauce.
When the tamarind sauce is boiling,
I'll add about 100ml of water.
The reason I add water is
to soften the pork.
If you don't add water,
the pork will be tough.
Now I'll add the tamarind sauce
to let the tamarind sauce soak into the pork.
When the tamarind sauce starts to thicken,
I'll add 100ml of water.
The water will soften the pork.
When the water is boiling,
I'll add the tamarind sauce again.
When the tamarind sauce is thickened,
I'll add some sugar to make it more colorful.
Stir it well.
Next, I'll add the rest of the onion.
Turn off the stove and set it aside.
After a few minutes,
we've finished the sweet and sour pork.
It's very simple and easy to make.
