Hello! Welcome back to my channel, Devina Hermawan.
Today, we'll be making Sundanese Honey Grilled Shrimp. To make it practical, I'll simply cook it with a nonstick pan.
The ingredients are simple and it's very practical to make.
Let's dive in! You can use any kind of shrimp you like. I'm using unpeeled medium to small-sized shrimp.
You can use larger shrimp or peeled ones, too. We'll marinate it with salt, pepper, and lime.
For the Honey Sauce, we need regular honey, not one with distinct aroma like forest honey, Manuka, etc.
I don't think they're suitable for this dish.
Then, we need oyster sauce, margarine, garlic-infused chili sauce, and tomato sauce.
I use tomato sauce that's used for Chinese cuisine, so it's red but it doesn't have a strong tomato flavor.
But, you can use a regular ketchup, too.
Also, if you don't want it to be spicy, skip the chili sauce.
First, I won't peel the shrimp, but I'll trim the tip of the head, such as the eyes and the sharp parts.
Next, I'll butterfly it like this and devein it. Repeat the steps for the rest of the shrimp.
Now, we'll marinate it. Prepare the lime by rolling it so it's easier to juice.
If the lime is large, use half. If it's small, use it all.
Add just a bit of salt since we'll cook this with sauce. Add pepper, then mix well.
If you're using small or peeled shrimp, you can simply mix it with the Honey Sauce directly.
They'll cook very quickly. But, if you're using large shrimp, it's better to separate the marinade and the sauce.
If you mix it, the shrimp may not be cooked inside while it's already burnt outside.
Marinate it for a moment while we prepare the sauce.
Prepare a bowl and add honey.
Some people may be concerned about cooking honey. We'll talk about that later.
Add the garlic-infused chili sauce or regular chili sauce. Or, if you like garlic, add a tiny bit of grated garlic.
Add tomato sauce, oyster sauce, and room-temp margarine, which is easy to stir.
Mix well. If it's too thick, add 1 tbsp of water to dilute so it doesn't burn easily.
Prepare a pan. To grill shrimp with a nonstick pan, choose the largest pan you have.
Turn on the heat all the way up and add oil. Then, add the shrimp in to cook.
Give space between the shrimp because it'll release water when cooked.
If you put them too closely, it'll be as if they're boiled. You'll lose the grilled aroma, so don't overcrowd the pan.
Once the shrimp are a bit browned, flip them.
We cook the shrimp halfway before adding the sauce so they don't burn due to the sweet sauce.
Especially, if the shrimp are large.
Now, we can add the sauce in. Stir for a moment but not too long as it may burn and become bitter.
You're maybe curious about cooking honey. Honey is commonly used in baking where it's heated.
Honey won't because poisonous when cooked, but some enzymes and nutritions will be reduced or lost.
So, its benefit may decrease.
If you don't want to use honey, replace it with sweet soy sauce or golden syrup.
Now, we can plate.
The dominant flavors are sweet and savory. It's also very fragrant from the honey and chili sauce.
You also get a smoky aroma from the heated margarine. Also, if you're using a pan to grill, high heat is mandatory.
But, be careful with the cooking time so it doesn't burn.
Make sure to not overcook the shrimp so it stays juicy and not rubbery.
This dish is great with rice, Shrimp Paste Sambal, fried tofu or tempeh, etc. like in a Sundanese restaurant.
