Dear ones, how nice that you are with us today, because today is a very special day for us, for us three, for Johann Lafer, for Roland and for me.
Because today our second common book will be published.
And we just thought, we have to tell you why we really made a second book.
Three years ago, dear ones, we already made a book called Essen gegen Arthrose.
The whole thing started four years ago.
And I would like to repeat the story again so that you know why we made a book back then.
And then, of course, why we are publishing another book today, which is called a little differently.
Johann, how was it back then?
First of all, I am very grateful that I can sit here, because that really took a very, very good turn in my life back then,
what we discovered together, or what I discovered with you.
I had extreme knee pain, where my arthrosis was so pronounced that at some point an operation could not be prevented on the left side.
And the professor then told me during the operation, we will definitely see each other again soon.
And I just realized that this operation, in connection with the rehab, was very, very tedious.
So for me it was tedious, perhaps also because I have always challenged the body in my profession.
And then of course I thought, somehow, no, you don't want that again.
Is there nothing you can do to counteract a second operation?
And Mr. Ehrenspiel, the publisher, said to me, I know someone in Bad Homburg, you have to go there.
They are specialists, they do this, they help you, the man with the fasting exercises, the woman is a doctor in the field of nutrition.
Then I said, let's make an appointment.
So I had no idea about it at all, but had a great experience before that.
I was with my cousin and her husband in Austria, when I do my fasting courses every year in Innsbruck, to hike.
And then he told me during the walk, I do the exercises of Liebscher Bracht every day.
And I said, I just heard that, Mr. Ehrenspiel just told me, you have to go there.
And then it wasn't that strange for me anymore.
And then I came to you, I still remember very well, it was really an extraordinary meeting,
because something happened that changed my life dramatically that day.
I mean, you still know, dear Roland, we are up the stairs.
I really had extreme problems.
Then you tormented me a bit, I say consciously, on this bed.
It wasn't as pleasant as you might imagine.
So it wasn't such a nice massage.
And I already noticed the first time, after you did that,
man, something can change, change noticeably.
Of course, that wasn't the end, but we then carried out these applications more often.
Then I did my exercises at home.
But the second thing that meant to me, dear Peter, that was you,
when you said to me, and you know me as a cook, out of passion, out of the full,
no matter where it comes from.
The light always said, a steak under 400 grams is carpaccio.
So you have to imagine, now someone comes and says,
Johan, how about vegan food?
So I can honestly say, when someone came to our restaurant and said,
I am vegan, then there was already an aggressiveness in the kitchen.
Because everyone said, man, can he or she not eat what everyone else eats?
Because back then it was still considered as something very special, extraordinary.
And you didn't even think about it.
Like in the past, in my apprenticeship, when someone came and said,
I am a vegetarian, then there was a classic, a mixed salad.
And for dessert, no, not for dessert, for the main course,
a veggie plate with fried egg.
You have to imagine, if I were to do that today,
everyone would say, the cook is already dead.
He doesn't register anything.
So that was, for me, first of all, I have to tell you, unimaginable.
So really unimaginable.
And I didn't really enjoy it at first,
because I didn't want to leave my habits.
It was so challenging for me to understand that.
And I thought to myself, Schmeier, what is the relationship now?
A little pain or eating, what is more important?
But I consciously wanted, I mean, I have spent many, many hours in my life,
and really nights in this profession.
And I wanted, after we were in so-called rest,
or sold our businesses,
I wanted to have a little bit of what we missed back with my wife.
And that's only possible if you have a good quality of life.
So if you walk around with a crutch and you go on a trip to Rome,
it's exhausting, I have to be honest.
And then, as I said, I took it very seriously.
It took a while, but now I really have to tell you,
I have internalized it so much,
be it the exercises, be it the form of nutrition,
that I really enjoy it a lot.
Today, with such a steak, I can't enjoy it at all anymore.
But I still do it, even though it's something
that is certainly the absolute delicacy for many.
And I eat the things that don't do me any good.
And that's perhaps the most important thing.
Absolutely only in exceptional cases.
Otherwise, I eat what I know my body reacts to, in a positive way.
And the whole thing has confirmed it again.
I work for the tennis players EDB, also in Shanghai.
And then I saw that almost all tennis players eat vegan.
And we also had to deal with it,
because we suddenly realized what these players,
for example, eat sweet potatoes, flowers and cabbage,
eat a lot, oatmeal, bananas, etc.
And then I thought to myself,
if someone can play on the sender court for four hours,
or even longer, with that kind of nutrition,
then Johannes will not only be able to do it in top sport,
but also for normal life.
And that's why I realized today,
or I know very well today,
that of course there is no sense or reaction after two weeks.
But if you have the real consistency to endure it
and really deal with it,
and really devote yourself to the topic with joy and great passion,
then I think you can really move mountains.
That's the case for me.
I think it's wonderful that you told the story again.
And I remember when you said,
I don't know, after two months or so,
when I saw you for the first time and you told me what you were doing,
did you think in silence,
oh God, I'm really sorry?
Yes, I thought, what kind of cult is this,
what do I have to do next,
where is the donation account,
or do I have to reveal my income or something?
No, people, don't be angry,
but you know, when someone comes and pushes it,
and you almost have to scream,
then I think, I can do that too.
I'll tell you another story.
I'll tell you another story from last year at Christmas.
It's really crazy.
I once saw a blacksmith in the Palatinate on TV.
He makes hand-carved Damascene knives.
And really great knives.
And then I come there, we got along well,
and he says,
do you also know that I brought therapists to Liepzig?
So I went there just to pick up my knife.
So my big gift after two years,
such a hand-carved knife.
Then I was suddenly lying next to him,
even though I wanted to pick up the knife,
on his bed,
and then he showed me,
what a great guy he is,
how he brought the method to Liepzig,
because we used it.
Really?
So I did bastion exercises.
There you can see how much it is anchored in society,
even in situations where you don't expect it at all.
But I can say one thing,
and that's really the most important thing.
I think every person is responsible for themselves.
Every person should choose the path that is right for them.
You should stop with these prejudices.
You shouldn't always just hit it,
but you should also, as they say,
live and let live.
And I have found a way for myself
to improve my quality of life.
Period.
I can't say more.
Everything else that people interpret,
I am often insulted,
because I do something on TV,
which is not part of my personal diet,
but I am there for the public.
People have a certain expectation of me.
Sure.
I show them that,
but I have found a way for me,
for me as a person,
and if you watch my shows today,
even during the kitchen battle,
I think that my recipes in the last few months
were almost all vegetarian or vegan.
Very rarely, when there is a special topic.
Last time, for example,
I made our eggplant steak with teriyaki sauce
from the book.
I mean, it came out better than the meat,
because people say,
how awesome it tastes,
a nicely salted eggplant slice,
marinated with teriyaki sauce.
So I just want to say that,
because I want it.
I don't do it, do you understand?
When someone says,
or often it is said,
now they are making the recipes again
to earn money,
because they sell the book.
No, it is a reflection of
where I have found the way for me,
that it is so that I feel better.
And I have, you understand,
what else should I do?
Yes, and I also think it is super important
that you said that again,
because we wrote this book together,
because we know that
there are a lot of people out there
who feel the same way as you do.
And that's why I want to bring Roland
into the game for a moment.
How is it when ...
Sorry that I talk so much now.
No, it's all good,
because you were so nice in the flow.
I didn't want to interrupt you, Johan.
How is it for you
when Johan tells this story,
that four years ago you came and ...
I can understand it very well.
I can understand it very well,
and that's why I think it's great
that it is made so public,
through these videos,
through the book you wrote.
Because a lot of people feel the same way.
A lot of people suffer,
have pain,
and often you don't find anything.
And then they get their medication,
and their stomach doesn't take it anymore,
and they are just floating around.
It is often told to me.
I have, sorry,
I have, long before,
I took pain pills every day,
and additional stomach pills.
It's like a chain reaction.
Exactly.
The stomach is attacked by the pain pills.
That's the guideline for us doctors.
And something else,
and that's just a little bit more,
what also came out of it,
I always had sodium bicarbonate
and too much gastric acid.
And because of this basic diet,
because of this change,
I don't have anything anymore.
That's also an important point.
But you don't take any more medication, do you?
I take,
well,
if I'm really invited to an extreme reception,
and I don't always want to say,
I don't drink this,
and I don't drink that,
where you are really fair,
as a invited guest,
you sometimes have to participate,
then it can be,
but usually I have completely reduced everything.
So I have reduced all my nutrition,
and what is perhaps the most important,
sorry again,
is that I just feel much more vital,
I don't feel so sleepless anymore,
so sluggish, so desperate.
That has really changed.
But now, you wanted to tell me.
It's important,
because there are a lot of people like you,
and that's why it's so great,
that you now have the chance
to just try it out.
It starts with the exercises.
Most people don't believe
that such harmless exercises,
which are done everywhere,
can have anything to do with
that you can get rid of pain for years,
where no one else could help.
Look, I'm with a professor in Austria,
because I go to the fasting church every year for three weeks
for an examination.
Then they say,
you have a very nice wear and tear
in your cervical spine,
in the back of your neck.
Sure, when I stand like this,
cook,
look down here,
it's logical,
that with over 40 years,
that it leaves traces at some point.
It's the same when I tie my hand
every day,
at some point I feel my hand tied,
do you understand?
That's how it is when I always look down.
And then you say,
you can't do much there,
because it's really wear and tear.
So what else is left for me to practice?
Like some exercises,
to look for relief exercises,
so I can relax my cervical spine
to some extent again,
and not run around
and always think,
you know,
I don't want to see anyone,
because people always say,
look, he's always looking down there.
Yes, sorry,
that's not how it works.
It's nice that you say that, yes.
Because it's not just about the knees,
it's really about every point on the body.
We have plus or minus 100 joints in the body,
and many people just live
because of their activity.
It's very typical for you,
but also for many other professions,
even in sports,
there are also special activities.
And as a result,
tension occurs in the muscles,
in the fascia,
and as a result,
joints are attacked,
there is wear and tear,
and in parallel,
pain arises.
And you can really,
most of them,
most of these states,
with the right exercises,
properly executed,
get under control,
which you have noticed
in your own body.
And that's what the whole world
should know,
and that's why I'm happy
about this new book.
Exactly,
that's why we wrote this book.
And it's called
Not Eating Against Arthritis,
that's what the first book was called.
This second book is called
Eating Against Pain,
because you can still...
From foot to head or vice versa.
Exactly,
and that's what it's about.
And that's why it's actually
our common story,
why we decided
to make another book.
But Peter,
I'd like you to explain
something else,
because it's a title
that first of all
conveys the impression
spontaneously,
now I'm eating a tangerine
and I don't have any pain anymore.
Maybe you have to
be a little more detailed.
I would be very happy
if you, from your point of view,
as a doctor,
a little bit,
through these micronutrients
and so on,
if you could explain it a little bit,
because I think a lot of people
already want to know in detail
how it works.
Sure.
On the one hand,
it's well described in the book.
Yes.
And you,
who are on my channel,
of course,
already know a lot about it.
But I can imagine,
because Johan is here now,
that there are definitely
viewers
who were not yet
on my channel.
And that's why
I'll do it very briefly now.
So our theory
of how pain is created
is the following.
Everything that is not good
for the body
brings the muscles
into excessive tension.
That's how you can say it.
Very simple.
And we now know
through a lot of research,
through a lot of studies,
that the plant-based diet,
from the genetics,
from the evolution,
is the diet
that is best for the body.
That means,
this diet
relaxes the muscles.
And in addition,
a lot is contained
in the plant-based diet,
which is not contained
in an animal diet.
For example,
the ballast substances.
Ballast substances,
that's a word,
actually a very...
False word.
Yes.
An incomprehensible term
that has been chosen.
Many confuse ballast substances
with calories, right?
Excuse me?
Many confuse ballast substances
with calories.
Are there?
I can imagine that.
That's a good idea.
I can imagine.
I haven't even thought about it.
They have no calories at all,
they just make you full.
And then they also feed
all our good gut bacteria.
And that's why it's so important
that we eat a lot of plant-based food,
because our immune system
is directly associated with the gut,
70-80% of the immune system
is associated with the gut.
That means,
of course,
we need the best nutrition
for the gut bacteria.
And that is,
the plant-based diet
with all the ballast substances.
Then the secondary plant substances.
The bitter substances,
I think, for example.
Yes, those are
secondary plant substances.
For me, for example,
the stimulation of digestion
by artichokes,
by dandelions,
things like that,
I think are great.
I also learned that,
chicory, for example,
arugula,
that's very, very good for me
when the food has a lot of bitter substances.
Exactly,
and that's why we have
a lot of recipes in there.
There's even a recipe
with brine.
I think it's great
that you made it.
Because it's free,
you can get it everywhere.
But that's all ...
But not on the dog meadow.
Yes, there are others too,
but it really grows everywhere,
it's totally healthy.
But we'll make another video
about that.
But those are only two things
that are wonderful
in plant-based nutrition.
Yes, absolutely.
In fact, the topic of acidification,
basic nutrition,
not purely basic,
but more basic than acidic,
that's the important thing.
And that comes automatically
with plant-based nutrition.
But I also want to say something
in general
about vegan nutrition.
For me, I live,
I think,
as far as I can,
vegan.
But I think
in terms of health,
it's sufficient
if it's 90-95%.
Exactly.
And that's where
this idea
for this other book
comes into play.
Because I think,
Johan, you really are
the person who could
build bridges.
Build bridges
between people who say,
I'm such an absolute pleasure person,
I need everything
that is pleasure.
And then there's Johan,
who used to eat so much meat,
liked it, good things,
always only high-quality things,
that's clear, but there were
also many from the animal sector.
And on the other hand,
there are the vegans,
the hardcore vegans.
And to bring these people
together,
if at all possible,
Johan can do that.
It's certainly like that.
You can do one thing
without leaving the other.
But everything
has to be in moderation,
everything has to be within the framework.
And I have to tell you,
my childhood was like it is today.
If I'm honest,
we were at the farm,
there was only once a week meat.
And that was on Sundays.
So if you take it like that,
it's only 10% of the week,
or maybe 15%
of the whole week,
where you say, okay, once,
because the meat was very expensive
and very rare,
and only small portions.
And today, when I go out to eat,
everyone wants to give you
the best, because you're known in public.
Then I often say to the employees,
you know, make me
a lot of side dishes,
make this a little bigger.
And you can handle it very well,
you can really handle it very well.
And due to the variety of spices,
which are now established
with us, and the whole
topic of herbs,
all the herbs that are really
offered almost everywhere today,
you have such a great
situation. I would like to take
an example from yesterday evening.
We had friends yesterday,
they were grilling.
Grilling is of course always this typical
sausage, meat, and so on.
And then I made the effort
to marinate the aubergines,
I already told you,
and the grills made a nice chimichurri sauce
with parsley,
garlic, and so on.
And I really have to say,
with this presentation,
what I did,
I was able to achieve
much more effect, much more curiosity
than with the steak.
Because people know that, they know.
It's all okay, it's also wonderful.
But people are also looking for alternatives.
And I think the sustainability
of nature, of agriculture,
today actually offers us
the duty, or we have the duty,
to support that.
Because you know very well,
it can't go on like this in the long run.
Because, of course,
also because of the animal husbandry,
if I hear the word already,
I have nothing against meat.
I would like to say again clearly,
a good piece of meat is still
absolutely okay.
But everything in moderation and everything at its time.
And if so, with a lot of respect
and high regard.
But through my creativity, through my personal experience,
you can make so many delicious dishes
from all these ingredients
that you can absolutely
completely do without
the ingredients.
Yesterday we made,
I advise Agustinum,
a senior founder, every day from me,
a vital menu. Yesterday we made
deer roasts
with a nice chicory salad
and sweet-sour twigs.
I tell you,
you don't miss anything.
But it has to be well done
and it has to taste good.
And that's exactly what's in this book.
I just want to say it again,
because I could imagine
that for many of you
it is a possibility
to get a little closer
to a healthy life.
Because you can feel it too.
In this book, by the way,
all exercises are also included.
For the whole body.
Do you want to say something about that again?
Maybe briefly about the arc,
to create the framework again,
it's about pain.
And our everyday movement
nowadays,
is ultimately the cause
that many things go wrong.
And in the moment
when you practically balance it
through exercises,
you are on the safe side.
But there is also
the biggest indirect factor,
so we call it, the nutritional influences.
And if I do my exercises
and I eat very badly,
or I eat a lot of things
that don't do my body so well,
it goes to tension
and it's harder for me to practice.
So it is entirely up to you
to do the exercises
and also a diet
that relaxes the body,
but at the same time,
and I am so grateful to him,
tastes super good.
Because that's also the combination
that doesn't exist that often.
Although more and more in recent years.
I mean,
they only have to suffer and only bad
and back and forth,
that's not the case at all anymore.
The light has once said,
you don't need to bury the vegans,
you can compost them.
Okay, okay.
No, but let's delete it for a moment
and come back.
So for me it's like this,
and I live it too,
I'm not 100%,
Petra is 100% vegan,
I would estimate between 98%.
So 10% is really okay.
We've talked about it.
There are even studies about it.
Yes, absolutely.
I mean, it's not a problem,
but it has to be so
that most of the part
I eat from
is good for my health.
And that's no longer a question today
that it comes from that area.
And to finish the arc,
the optimal approach is
to do the right exercises.
Absolutely.
I take for myself
the ones I have developed myself,
because I have specialized
them for the pain.
How long does it actually take
to combine them with such a diet?
That's the optimum.
How long do you need a day
to do these exercises
that are in here?
15 minutes.
That's important for you
It's not a big effort
for the effect you have.
And I mean, the goal
that we have now
with all the people
who do the exercises
that are in the app,
who do the training,
who pass it on to their patients,
etc.
We want what everyone thinks
would be normal.
The older, the more pain,
the more wear, the more throat.
I would say,
for those who don't know it yet,
the older we get,
the more painless and
the more flexible we become.
And that works.
I am personally convinced of that.
But you, the audience,
can only find out
by trying it.
Johan is a great example,
because he was super skeptical,
didn't think it was possible at all.
And today we did the exercises
and Peter, you don't know it yet,
I was flashed.
Because Johan was straight before.
And now he has a real curve
to the back.
And he practiced, I saw that immediately.
And I think that's great.
Yes, but you can also say that
with one sentence.
If I personally want to get better,
sorry,
if I personally want to get better,
then it makes sense
to do something about it.
There are many possibilities.
For me it has become this possibility.
Thank God.
And I am very grateful
that I got this chance through you.
With pleasure, it's super fun.
And now I really hope
that we three,
a lot of people,
maybe wanted
to do something for themselves.
Maybe.
Because,
sorry,
as it goes to Johan today,
it can also go to
a lot of other people
who are in pain now
and decide what to do now.
So now you say.
Yes, and I recommend you,
neither me nor Petra nor Johan
believe anyone,
believe only your own body.
And to get this information,
your own body,
try it out.
We are not the ones who say
that you should give up
and find another way.
Get away from drugs,
away from other things.
First try to come to terms with yourself
and then, when the body gives feedback,
then decide.
If someone had told me
five or six years ago
that I am sitting here
and I am out in public
with my knee problems,
with the reaction afterwards,
I would have said,
you cooked really well today.
And no one cares
what Johan Lafer does.
And I did it because
I am the living proof
that nothing comes from nothing.
I chose this method,
it does me good.
There may be many other methods,
but I am very happy
that I feel better.
Because I want to,
I am turning 66 in September,
and I would like to spend
the rest of my life
in a state where
I still have a reason
to be happy.
You mean it is your second life?
Yes.
Thank you.
We will make another book about it.
Then I will take you on board.
If we can do that,
we will make a new book.
By the way, I read a very interesting thesis
that really touched me.
There is a place in Japan
called Inawa.
They are all over 100 years old.
Or were, I don't know.
No, because their
lifestyles have changed
a lot compared to the Europeans.
And then it goes downhill.
To be honest,
I read that back then
they always stopped
when their stomachs were filled to two-thirds.
Exactly.
And now you know it,
you haven't eaten anything,
your stomach is full.
I totally get it.
And you don't need it anymore.
When you have eaten,
you are so sluggish
that you almost have to go to sleep.
This is the typical system
when having lunch.
And then you think,
where is the next bed?
At weddings,
after lunch,
where everyone is lying on the couch.
Yes, then it's over.
And that is also a sign
of how good
can turn into bad.
And now we should
try again
to turn the bad into the good.
And I think that people
are much more open-minded
nowadays.
They know that exercise is necessary
to stay fit
and to become fit.
And that food has a huge power.
I always say,
food is medicine.
I am so convinced of that.
It's the basis of our being.
We had an event in Oberstein
with 400 people.
We had two stands.
Barbecue and risotto
with a small piece of fish.
And it was the first time in my life
that I have seen
that much more people
have eaten risotto with fish
than meat.
In the past,
we used to eat it with meat,
vegetables,
a sauce and potatoes.
But women have changed.
They said,
meat is just a small piece of meat
with a lot more vegetables
and ingredients.
And for the first time
I was sure
that what we have been doing
and discussing for a long time
is becoming more and more common.
And next time,
I will take a plant-based diet.
And then we'll see
how that will turn out.
What do you think?
I am sure that
there will be more and more
plant-based diet in society.
Unfortunately, God still has
a certain prejudice.
You say, okay,
there is something missing,
a piece of fish or a piece of meat.
You know the saying.
But that is changing massively.
And we will report
how it turned out.
Thank you very much
for being here today.
It is a very important day
for all of us.
And I am so excited
that you create the bridge
between these two extremes.
Because they are worlds.
They are lifestyles
that are different.
And you don't have to
be so extreme.
You can just feel it.
And as Johan is doing now,
you can feel it as well.
As I said before,
he also committed to
what he didn't believe in
in the beginning.
But he did it.
And now he is doing well.
And as they say,
live and let live.
Exactly.
But we can still
share our experiences.
And above all,
if you know people
that you think
they should hear
what we just said,
then please share this video.
And of course I am happy
if you subscribe to my channel
and if you give me a thumbs up
and if you write a lot of comments
below.
And if you want more information
about the book,
you can do it here.
It was fun.
Thank you very much.
Thank you for listening.
All the best.
And let it taste good
for your health
and against your pain.
See you.
