Riesling is regarded as the most important white grape variety in the world.
Its distinctive flowery and fruity aromas are often mixed with natural mineral flavors from the soil
and vary from strong to fresh. Attracted by this fascinating myriad of changes,
we come to the origin of Riesling, Germany to explore the secrets of the historic and rich
The cool climate in Germany allows for a long season for Riesling.
The sunny riverbanks enable the grapes to ripen through all the seasonal hardships.
Harvesting usually starts in mid-October and could go into November and even December.
The length of its maturation period directly affects Riesling's outstanding bouquet.
Hello, my name is Kai. I drive here through the area of Rheinhessen.
We're looking for the best Riesling for you.
Kai Schattner, top sommelier of German Riesling,
is the best guide you want for knowing about Riesling.
As a sommelier, you have to look for the wines all over the world.
The heart of the sommelier is that you will find the really good producer and introduce to the people.
Twelve years ago, Kai started his wine stewardship career in the famous Ant Restaurant.
With his expertise in Riesling and authoritative mastery of taste trends and consumer habits,
he received the Riesling Outstanding Contribution Award from the German government.
Riesling is the king of the white wine grape.
For me, it's one of the most harmonic and most powerful grape of the world.
Kai is not only a friend of us, Kai is an absolute expert.
In our opinion, Kai is the best sommelier in Germany. He has a great nose.
I know all these producers. I have the possibility to visit them and to take the best barrels.
In these months of the year, Kai Schattner and his partner, Tim Steinbrecher,
would survey grapes and call on winters in the many production regions.
Selecting the best Riesling for KS, selected wines and thus recommending it to the world.
We are not a winemaker or not a producer. We are scouts on the market.
We'll select these vineyards who run with a perfect quality and who give people who are
not that familiar with wine good experiences how to understand wine, how to use wine,
how to drink wine, how they should store it. And this is what KS stands for and especially
for high quality and a long, long tradition with a German perfect product, the Riesling.
I will visit now a couple in a very, very good winery,
Battenfeld Spanier. And if you want to know more about wine, just follow me.
The Weingart Battenfeld Spanier that Kai is going to visit is situated on the southernmost part of
Van Gaal, one of the three wine producing regions in Rheinhessen. The Weingart Battenfeld Spanier
owns vineyards in the wine producing villages near Van Gaal. German Riesling vineyards require
smallness and separateness in order to produce the purest grapes. Hans Oliver Spanier, the winery
owner, is one of the most persistent among the younger generation of German winemakers.
Oliver has been co-managing the winery with his wife, Caroline Spanier-Gillot, since 2006.
Spanier is, in my opinion, a genius, maybe the most creative winemaker in Germany right now.
He's able to combine old grapes with a long, long taste, with a smoothness of it,
but with less alcohol and less sugar on the side. A lot of people ask me what is the secret for the
special and the unique of our wines. But the secret is we haven't any secrets. So we only
produce grapes from the best spots around the whole world and white. Oliver is proud of the
right here on his winery. The optimal environment for the growth of Riesling
is the terrace that stores heat and contains rich minerals on the steep slopes along the valley
sides. The slopes of over 60 degrees are found in the Neirstein region that produces balanced
and delicate Riesling with a strong flavor and fruity aroma. We are really lucky. So in the whole
we have around almost seven hectares here in the red, we call it the red side, because when you
look around everything is red. So we are lucky to have it. Everybody is watching for you.
Everybody is looking at us, yes. Some colleagues are very jealous. As you see, the vineyard is
really steep. It's 70 percent, which is the most steepest vineyard in whole Rheinhessen in the area.
And what is very famous for here is the red soil, the red slate. And here's only 50 centimeters of
soil and under it there's a completely rock. That's why the roots of the wines have to be
very, very deep. And this makes the wines from the Riesling wines from here so unique in the world.
It's completely different. It's completely different, yes, of course. This is our aim,
that we make the soil where the wine is grown tasteable later in the wine.
So you have the flintstone in the nose and the pure minerality from the red slate.
So the grapes from the Fraunberg 2011 and the Petenthal 2011 are harvested on the same day
and they are pressed on the same press and they are fermented spontaneous in the same cellar in
the same oaks in the neighborhood. And now you have totally different wines, totally different.
It's unique, yeah?
It's totally unique, yes, of course.
The landmark, a church with a white tower and edges of red sandstone, can be seen from afar.
Further down is the renowned Kirchenstuck vineyard,
where Weingart Battenfeld Spanier owns another piece of land.
The Kirchenstuck is more confident, more complex, more fruit and Fraunberg is pure
minerality and Kirchenstuck is more handsome. 12 years ago I used extreme special plants.
The plants come from old Alsace, from Wachau and from the Mosel area and I mix it.
So every plant, every wine is a single, so to say. And so we have a lot of mixture here and
for my opinion it gives more stability for the wines.
I think the skin is a little bit harder, tastes a little bit more kind of spicy.
Maybe, yes. So the rose goes from east to west and we have the whole day the sun here on the skins
and the skins will be a little bit harder then.
It's called a WDP.
WDP.
Yeah, WDP. It's, I think, since several years you belong to the top 100 producer in Germany,
but even you're higher now.
WDP is short for the German name of the Association of German Prodigate Wine Estates.
Its emblem is an eagle which is found on the bottleneck labels of every wine produced by WDP
members.
Wines produced by WDP members are of top quality and enjoy high prestige and therefore priced higher.
2011.
2011, oh.
A fresh one, for my opinion a little bit too fresh now.
But it's right, it's the same flavor you described in the vignette.
It's very fruity, powerful, round and full body and a long taste.
It's a very gentle wine and the fruit is extremely elegant.
The Spanier wine acts as kind of a spokesperson for the rich soil,
from marl to crushed limestone and to pure limestone.
All of these stones can actually be tasted and experienced.
Carefully utilizing the natural resources, Oliver does not start harvesting until the
grape skin begins to dissolve and the minerals begin to release.
Now we're here in one of our best vineyards.
It's called Frauenberg.
And for my opinion it's one of the best Riesling slopes around the whole world.
And the reason is, so we have here only 30 centimeters
soil and then it comes pure chalk rocks.
It's an incredible color.
It seems to get very ripe now and I think we have to,
you have to wait two or three weeks with the harvest maybe?
At least.
So I think we wait at least four weeks, six weeks maybe.
So first of November.
Maybe we start to harvest.
But you can wait until it's totally healthy.
And the grapes are so little and the bunches are extremely, extremely smooth.
And I think it will be a really, really, really fine vintage, of course.
And you have very small grapes here.
It's just like a bigger egg.
Yeah, that's all the site.
So the flowering here is every year late.
And then you have little bunches and also perfect conditions.
That's one of the reasons.
The soil, the wind conditions, the temperature around the whole year.
And in the result, that's top terroir.
Riesling does not only reflect the soil where grapevines are grown,
but the wine also retains a hint of the sunshine,
the people, the slopes, the flowers and the grass.
It would be a wise investment decision to take it home and wait patiently for the return,
as Riesling of optimal age has a good aging capacity with a potential of 10 to 20 years.
2002, the fruit is totally gone.
And now you can feel the pure rock, the pure minerality and where the wine comes from.
And this is, for my opinion, the whole and the main thing for a great wine.
10 years and the wine is fresh, elegant, and you want to drink it glass by glass.
I can show you the potential of great Rieslings.
The potential is, it's unbelievable.
So we drink a 10 years old wine and the wine is pure, fresh, elegant.
I think it will work together with some wild duck or wild poultry, something like that.
It's very, very high level of wine to give to the dish.
Young Riesling is as glittering and clear as crystal and light yellow or light green in color.
In the aging process, it becomes golden and honey-like in color and its consistency thickens.
In terms of flavor, it is acidic with a cleanness and mildness when young
and strong, sweet and hot when mature after aging.
And in its complex, strong aroma and long aging abilities,
the Spanier Riesling seems to contain the magic of romantic love.
It's a special couple wine.
It's a special couple wine, of course, that's right.
For our marriage, yes.
For our marriage.
The first vintage was 2005.
That's the wine that we drink on our marriage.
And the second vintage is 2006.
And so every year it gives some bottles of the idea wine.
It's a blend of the best wines in every top side what we have.
It's a special selection of the wines, but the stones are totally pure.
I think there are some wines you drink in your life which stay in mind.
Even after one or two or three years, you can describe the wine, how it tasted.
And this is not too often.
I think it needs a really good partner for the dish.
And for example, I can imagine some kind of mushrooms,
which are really, really exciting, really expansive, which are rare in the season.
The richness of Riesling aroma agrees nicely with the flavor variety of Chinese dishes,
which implies a great market opportunity for Riesling in China.
In recent years, Riesling has been expanding rapidly in the Chinese market.
In 2011, China catapulted to become the biggest Asian market for German wine.
As a result, KS has specially selected some Riesling for the Chinese market,
and Spanier is among them.
KS Selected Wines is to select a passion and to transport a passion of wine
and to transport this quality to our Chinese friends and to the Chinese market
to get a knowledge of the wine, what is behind the wine,
and what is the German Riesling standing for.
